Remember Me? How 'bout some Mock Crab Cakes?

Ok, so it's not much of a segway from my last post ions ago to this one, but it's pretty much how I feel these days, longing to cook something fun and blog about it but totally too frantic to get anything done that is blogworthy.

While I wish I could say that these babies were made with the amazing okara that came from a yummy batch of soy milk from my swanky new Soya Bella, I can only say that they were pretty great with just run of the mill store-bought tofu (and I've yet to make anything particularly 'yummy' with my Soya Bella...yet!). These are basically carrot, onion, celery, parsley, Vegannaise, bread crumbs, tofu, kelp powder, and Old Bay seasoning, coated with panko, fried, then baked for about fifteen minutes. I topped 'em with a very unoriginal blend of Vegannaise, organic ketchup and some horseradish which really made them sing. Served 'em up with a side of broiled nutritional yeasty (i cannot ever bring myself to say 'nooch-' anything) cauliflower and grape tomatoes and feasted on a fine vegan dinner. I think the only change I'd make next time is to use more of a binder like flax meal and water to help them to stick together and not be so delicate.

Not too shabby for a gal with a seven month old, six felines, one really bad but totally lovable 85 lbs of yellow lab silliness to corral and a bum neck. (yep, this post was inspired by me in a cervical collar all hopped up on steroids and muscle relaxers. good times.) luckily, the felines are adjusting pretty nicely to their new space so they don't cause much trouble,the dog is happy to mope in the kitchen just waiting for crumbs...and the seven month old? you just put her jumparoo wherever you need to get something done and viola! you have about thirty minutes of total baby euphoria. go!we're totally loving it living at home in a fairy tale neighborhood, a house that feels made just for us, and in a town we have always been in love with. we're surrounded by friends, family, and a like-minded community full of fun stuff to do. now, if i could just get the mounds of belongings from out of the garage into our living space i might know where half of my kitchen stuff is....but who has time what with all this fun we're having!

Hello, I have recently turned vegan (and I'm lovin' it!!) and have discovered your blog - this recipe sounds truly delicious.
All your little ones are lovely!
Do you mind me asking what you feed your animals? I admit that this is pure curiosity!

Hase, welcome! Thought I would answer your question here (too bad all my years studying German didn't pay off or I'd answer you properly on yours!).

While veganism is, for me, the best option, I don't personall believe in it being something that is right for my beloved felines and token canine. I studied Biology in college and spent years as a wildlife rehabilitator. I'm okay with other animals being carnivores or omnivores. It does bother me that the industries that provide their meat stuff-laden foods are rarely as humane in their practice as I would like to see. With so many animals who each need different types of food (two of mine are geriatric, one has urinary issues, one is obesely overweight, one is entirely too nervous and therefore a bit thin, etc) I choose to select the healthiest options I can afford. This means that I buy Blue brand dog food for my hefty Labrador and Royal Canin cat food of various types for my kitties. I do buy free range, organically fed chicken to cook for my older two kitties. sometimes it's the only thing either of them will eat or can stomach. i don't love doing it, but i do love them, and keeping them in my care, for me, means providing them with some semblance of the life they would lead on their own if they could.

now, hopefully I'll find more time to blog again and give you some great ideas....tho, there are so many wonderful blogging vegans out there i'm sure you'll be full of good ideas in no time!

Thank you very much for your answer! I am totally with you here. I currently don't have any pets myself, but if I had, I think I couldn't imagine feeding them in a vegan manner either.

I have only turned vegan very recently, about four weeks ago - but I'm loving every single day of it, it's a great feeling, and the greatest thing is that I don't feel like missing out on something at all - on the contrary, when I watch other people's baskets in the supermarket, I can't help feeling a bit sorry for them for eating all that crap... ;-)

Good to hear from you! The jumperoo is great! We broke down and got one of those too so the pics look totally familiar. He's watching Baby Einstein on TV right now. I'm not a big fan of parking him in front of the TV very often but sometimes you need a break ;-) Hope you're getting better soon!
