Isa's Done it Again

Give that girl a mango and look out! I've always been in love with VWaV's Curried Mango Tempeh Salad and look forward to it every summer when mangoes are at their peak. So imagine my surprise when beautiful just the right amount of soft mangoes were 10 for $1 at the grocery store recently. With no tempeh in the house (gasp!) what was I to do? I cracked open Veganomicon and there was another mango masterpiece, Mango Quinoa Black Bean Salad (or some such thing, I've honestly no recollection of what her proper name for it is, and I'm entirely too lazy and too pregnant to get up, walk back across the house, and go find out ;).

Quinoa, as you know, is not only a protein powerhouse, but cooks up in no time. Chop up a mango, a pepper (I had orange while the recipe calls for red), some green onions, black beans, cilantro, and a few dressing-y ingredients and viola! A bowl of delicious, healthy, refreshing goodness is born!
This will be great to whip up in the summer for family gatherings, but the last couple of days I've just been dishing up a bowl and calling it lunch!

Hi ya! I am so jealous of your posts the past couple days. I have been away from my comp and when I saw these I was a drooling mess. I so wish our library would carry more vegan cookbooks. Delish!

Quinoa really is the perfect food... I am on such a quinoa kick right now. My aunt in Bolivia just sent me a great quinoa recipe book from there based on traditional indigenous foods. It's not all vegetarian stuff but there's a number of great sounding recipes I should be able to veganize. Your mango bean dish looks fantastic.

Hmmm.... Would you be able to eat that cold? Looks like something that could go either way, esp with the orange pepper and mango... I am NOT a fan of mango, but that does sound good! (And what a lovely picture! *wink*)

I also have to agree... I wouldn't get up across the house to get the name of it either :o)

Brandie- i liked this best at room temp but it was great cold, too. it's pretty versatile. you could sub out pineapple or papaya for the mango.

Ohmigosh - TEN mangoes for a DOLLAR?! I'll take 30, please, LOL! A little jealous here. I love mangoes so much, I can just eat them over the sink with the juice running down my arm, I swear...

That looks delicious, we're going to have to try it. And I love the curried tempeh/mango salad from VWaV too. Totally craving that now... YUM!!!

OMG NO FAIR! I was on vacation and saw mangoes 10 for 10 and i was like omg! bargain! we have to buy at least a couple... but we don't have a fridge or a kitchen where we stayed so one went to waste as we did not have that much time to sit and eat... i wanted a blender to make smoothies! how are you not like jaundiced with mangoes like that! i'd eat myself sick like that!

10 for a buck mango!?! I'm so jealous! I love fresh mango, but the only ones I can find this time of year are hard and tasteless... I'm cooking vicariously through you!

10 Mango's for a dollar??? OH MY GOOD MUSHROOM GRAVEY! What I would DO to see that sign at my grocery! UN-FLIPPEN HEARD of! In our neck of the woods we are soo happy when one mango cost a buck twenty five!

Oh my God. That looks soooooo good. We were thinking of doing mango quesadillas soon, but I think we'll go for this instead. Plus, I've been looking for an excuse to bust out the quinoa. :)
