Super Easy Tofu Scramble (and my favorite)

Sure, we've all made 'em before. and there are a myriad of ways to do so, but this one is my personal favorite and very, very easy.

Start with a block of extra firm tofu that has been well pressed to get out as much water as possible. Often, I'll even wrap it in a dishtowel and put in the 'fridge overnight.

heat oil in pan and crumble tofu into pan, sauteing until lightly browned...this never happens quickly, in my experience, no matter how much water I get out of it.
then add a splash or two of tamari ( i use the low sodium) and then some nutritional yeast. this will not only give it more depth of flavor but till make for better browning of the tofu.next, i add some chopped onion and garlic and saute until the onion is beginning to brown and is very fragrant....mmmmmmmi like to add some sliced mushrooms now, and allow them to cook off most of their liquid, adding another splash of tamari and maybe some more n.y. ( i love this stuff, so i tend to be heavy handed with it). add your favorite spices. for me in a scramble? I'm a fan of the sea salt, pepper, oregano, and thyme blend. i just love the combo in my tofu.
now for the green! 'cause i don't know about you, but i love green veggies in the morning. this particular morning i used spinach. just chop it up and add, sauteing until it wilts. but i do so love some broccoli, kale, or asparagus in it's place when i have it.serve in a whole wheat wrap and top with some shredded fresh organic carrot with a side of your favorite fruit. i've still been enjoying all the navel oranges as of late with breakfast. yum!voila! easy and tasty breakfast in no time flat with very simple ingredients. honestly, i just loved the pics i snapped of the tofu from this particular morning and thought it would make for a fun post.

after see this i must try to make scrambled tofu one more time, a few years ago i try to make it and taste so bad that im still dont try it again, but like you explain it so well i think i will do it this week.

Your photos look great! I love tofu scrambles, but I have never put it in a wrap before--yours looks so professional all wrapped up like that!

Wow, those are great pics! I've never tried this, simply because all the pictures of scrambled tofu I've seen looked like vomit, but yours gives me hope that I could really like this! I'll be trying it soon.

I'm not veg, but I love tofu, and yet for some reason, I have never made a tofu scramble. Might have to now.

Mmm looks great, thanks for the recipe! Everybody always thinks tofu scramble is so basic they never post what they do, well I'm glad you did! I still need ideas!

Mmm, I love scrambled tofu, but I have not tried it with these spices, and I'm going to! Looks great. I love the spinach in it.

I've also just saved your recipe for the Patty's made with tofu and using the Shroom Fondue! Oh wow, those look great!!

Tofu scramble is definitely yummy, so I'll be giving your recipe a try. I love that you wrapped it. By the way what kind of wrap is that? I almost looks thin like roti or something.

Thank you all, I'm so very glad that this has been so well received! I honestly thought after posting it that I'd be boring you with something you were well versed in and possibly tired of.

It's nice to know that my first instinct, that maybe there were plenty of vegans out there (like I was in my veg days) who were a bit unsure of how to scramble tofu and make it yummy was the right one!

I love to make a scramble like this when we're traveling because, even cold, it's wonderful in a wrap (maybe with some more raw veggies of your choosing) when you know you'll need to bring your own food.

maybepigscanfly- it's either a whole wheat or a low carb/low fat wrap from Toufayan Bakeries. I get them in the regular grocery store near the deli. we like them because they're vegan, yummy, healthy, and don't tear when you wrap things.
