Zucchini Pancake Recipe

Sometimes it's the simplest things that turn into the best meals. After noticing an abundance of zucchini in the fridge, whipping out the electric griddle and mixing these up seemed like the perfect way to start the day!
First one side....then the other...then a decadent smidge of Toffutti Better Than Sour Cream and some fresh black pepper and YUM! So good!

I believe I swiped the following two recipes from Recipezaar, but can't be sure. I found the pancake recipe first, then hunted down a homemade sub for Bisquick, and here ya have 'em!

Bisquick Clone (makes enough for the first batch and refrigerates well for the second and possible third)
1 and 1/8 c. flour
1 T baking powder
1 1/2 tsp sugar
1/4 tsp salt
2 1/2 T canola oil

Mix first four ingredients well, then add oil and cut in until crumbly texture is achieved.

Zucchini Pancakes (makes about eight)
1/2 c. Bisquick Clone
1 c. shredded zucchini
1/4 c. shredded vegan cheese (i like FYH's monteray jack)
2 T. chopped green onion
1 egg replacer (i used enerG egg replacer, but i imagine flax would work well too and taste heartier)
salt and pepper to taste
couple pinches coriander
healthy dash of paprika

oil for the pan/griddle (i used grapeseed oil)

mix together all ingredients. oil hot pan or griddle and drop globs of batter onto it. the mix is reeeally sticky so be ready to get your hands dirty with this one. so worth it! heat about five minutes per side or until golden brown. serve plain or with topping of your choice. we tried these the first time with applesauce and that was yummy too!

I tried to make these zucchini pancakes today but I couldn't because I don't understand the recipe: the bisquick clone recipe makes only a small amount with the 1/8 cup of flour while the zucchini pancake recipe says that you need 1/2 cup of bisquick clone?
Please help me understand the recipe so I can make these delicious looking pancakes!

Hey anon...i'm SO sorry about that! total typo on my part. It should read 1 and 1/8 cups not just 1/8.

I've fixed it in the original post.
Hope yours (now) turn out just as scrumptious and, again, sorry!

I'm glad it was just a typo (I read the recipe three times and thought I was stupid not being able to understand it)!
That day I ate the zucchini in a stir fry, but I'm going to buy some more this week to make the pancakes.

I made these last night for my boyfriend and his parents (non of whom are vegan) anf they gobbled them up. I did, however quadruple the recipe. I served them w/"sour creme" and roasted sweet potatos, and a salad. Perfect for a chilly Florida night.

Next time though, we're gonna up the amount of veggies, and maybe add a little carrot for colour.

no liquid? i would think that this would require some kind of milk like soy or rice? did you accidently omit this as well?

Pete, I think what I failed to mention was by Egg Replacer, I meant the powder replacer plus whatever water is needed to combine with it to be the equivalent of one egg. that's all the moisture I remember needing, but I'm sure if yours were to appear too dry, a splash of non-dairy milk certainly wouldn't hurt!
