Next Up, White Bean & Leek Cassoulet!

My second Vegonomicon venture and TOTAL success...Living in FL, I'm used to hearing about everyone else's fall days inspiring cool weather fare full of autumn vegetable and warm tasty goodness far before I join in the fun. Typically? I actually savor every last hot day we have....but ever since my copy of Veganomicon arrived and I littered it with bookmarks of recipes I'm just dying to try I've been hoping for even a hint of fall to make this dish.

Today I got it. It was sunny and beautiful AND cooler than it's been all year. Sitting out on our porch reading and taking in the breeze got my butt in the kitchen to throw this one together. It's super easy, the biscuits are light and soft and the stew totally satifying, and it's simple enough to let the true flavors of its ingredients shine.
From all the Mmmmmm's heard from both myself and the Captain while enjoying this dish, I'd say Veganomicon must be chock FULL of home runs!

As you can see, my copy of V'con is already warped on a few pages. Good thing this one's hard cover.....my copy of VWaV is so battered and splattered it's a true testament to just how much vegan yummy is found within it's pages.

anon- i'll gladly give up the oatmeal recipe. i make it a habit not to share the ones from other people's cookbooks, tho. oh, and...who are you? so i know how to share. ;)

Oh wow, that looks good. I'm going to try to talk my husband into making that for me. :P

(seriously, we have not made one bad or even just -meh- recipe out of that book yet, and we've made a TON!)

I just got my copy of veganonmicon and can't wait to make the white bean and leek cassoulet..it looks so delicious..and I love anything with biscuits on top.

Also, congrags on the little goblin I just saw in your halloween post. How exciting! Good luck and take care of yourself with all of your yummy meals..even though you won't alway's want to eat them.

I can't stand it! Everyone is posting from this new book and I think I am going to go crazy! This meal looks like a wonderful one. I am now so hungry. Why do I visit my blogging buddies this close to dinner? Ahhhhhhhhhhhh I need to get this book!

I'm so behind on your posts! Bottom line: CONGRATULATIONS on the baby! I was beginning to wonder if a he/she was the food nausea culprit... These last two food posts look outstanding and firmly persuade me of my need to buy this book (not that I ever doubted). (-:

Follow-up - my amazing husband made this tonight and it was sooo good! Those biscuits are delicious. YUM!

alejalopezr- unfortunately, the white bean and leek cassoulet is from the new Veganomicon cookbook, and I never share recipes from published works without the author's permission.

as for the pan seared oatmeal, that's easy!
1.prepare steel cut oats according to package directions. mix in a bit of maple syrup and soy milk at the end to taste, then put in small circular containers and stick in the fridge over night.
2. when ready to eat, take solidified oatmeal (now molded ot the shape of your conainer) out and cut a disk of the oatmeal. heat pan over med heat and add some EB or other vegan margarine.
3. brown both sides
4. place some balsamic vinegar GLAZE (not just vinegar, this has to be a glaze, it's sweeter and much thicker) on a plate, top with the oatmeal and top that with walnuts, banana, cranberries, and a bit of agave nectar.
tada! breakfast never tasted so good!

I have a leek waiting in my fridge. I thought about making a potato leek soup or something. no definite plans. and then I saw your post and I was inspired me to make this! I ordered the veganomican book, but it will be a week before it gets here (I opted for free shipping), and you can imagine what my leek will become in that time if I don't use it. Would you be a dear and email the recipe to me? I can give evidence that I bought the book... please???

ok, last time, I promise. I got an autoreply from Isa saying that she's swamped answering emails, so I don't know if she'll be able to reply in the next few days. therefore, I renew my plea to you for assistance using up my leek before it goes bad.
