Here's a favorite at our house. This is a quick and easy lunch or dinner that I, personally, can't get enough of. Bake a potato, scoop out the insides, leaving a shell and taking the top part off and setting it aside.
mash with tater innards: vegan marg, soy milk, garlic powder, sea salt, black pepper, and nutritional yeast to taste. Now stuff that back into the potato and put a bit of vegan marg. on the potato skin top as well. place both under the broiler.
meanwhile, cook up some broccoli, saute it, blanch it, whatever you like....just make sure you use a lot of garlic, some sea salt, fresh black pepper, some oregano, and a pinch of basil. serve with potato and enjoy!
